Baker in the Mettmann district: New technology ensures more sleep and less stress!

Around 1300 bakers in the Mettmann district get up early to bake and sell fresh bread, bread rolls and butter cakes. This industry knows no mercy for morning muffle, as Zayde Torun from the Trade Union Nutrition and Gastenstätten (NGG) notes. Working hours are hard, many employees have to get up in the middle of the night to make the baked goods in good time.

But there are new developments that can make daily work in the bakery easier. An innovative cooling technique enables dough to prepare dough the day before. This allows bakers to bake fresh bread in the morning, which not only increases productivity, but also enables employees to get more sleep. These changes could help improve the often stressful work environment.

The promotion of attractive working conditions in the bakery industry, according to Dirk Himmelmann from the NGG, is an important goal. In Lübeck, for example, around 840 specialists work in this area, and a rethink in the companies is urgently required. The "bakery monitor" of the Hans Böckler Foundation shows alarming numbers: 50% of the employees complain about overtime, and over 80% experience time pressure and stress during their working hours. In addition, almost half of the employees have few breaks, while 84% of noticeable lack of personnel report.

In order to meet these challenges, the NGG plans negotiations on better working conditions, especially in the bread industry. The union is committed to the introduction of adapted shift models to make working hours more humane. Another focus is on paying wages to avoid future pension problems.

In the recruitment of young people, there is a positive trend, since bakeries are increasingly relying on migrants as new specialists. Every fourth trainee in the back industry has a migration background. In Lübeck there are 39 bakeries with a total of 42 trainees who earn around 1,020 euros per month at the beginning of their training. In the third year the salary is already 1,230 euros.

The NGG emphasizes that a future -proof industry can only be created through better working conditions and an attractiveness for new employees. One thing is clear about the numerous challenges with which the industry is currently confronted: it is time to reform the working conditions for the bakers in Germany and adapt to today's requirements. This is the only way to remain interesting for future generations.
